Apple Pie Protein Crepes Recipe

This apple pie protein crepes recipe is a great way to add protein to your breakfast! They are very simple to make and they taste so good and they have the added bonus of extra protein! I know some people don’t like putting protein powder in their recipes so if that is you feel free to sub the 2 tbs of protein powder with 2 additional tbs of oats. It wont have as much protein that way but it will still have much more than the average crepe :)

Crepes Ingredients

  • 1/4 cup Old fashioned oats
  • 1/2 cup Egg whites (~about 4 egg whites)
  • 2 tbs Protein powder
  • 2 tbs Unsweetened applesauce
  • 2 tbs Unsweetened almond milk (or low fat milk)
  • 1 pkt Stevia (or 1 tbs sweetener of choice)
  • 1 Pinch Salt
  • 1/2 tsp Baking powder
  • 1/2 tsp Apple pie spice
  • 1/2 tsp Cinnamon

Apple Pie Filling Ingredients

  • 1 Medium apple, skin removed and diced
  • 1/2 tsp Apple pie spice
  • 1 pkt Stevia (or 1 tbs sweetener of choice)
  • Pinch Salt
  • 1 tbs Honey or sugar free maple syrup

Crepes Directions

  1. Place all of the ingredients for the crepes in a blender and blend until oats are ground and you have a smooth mixture (will look like a thin pancake batter.)
  2. Spray a large non-stick pan with cooking spray and turn heat to medium.
  3. Pour 1/2 of batter into pan, and swirl around so the batter covers the entire pan, (should form a thin layer of mixture over entire pan).
  4. When the crepe begins to form bubbles, it is ready to flip! Gently flip crepe and let cook until it is golden brown on both sides.
  5. Repeat to make the second crepe, and turn off heat.
  6. Place crepes on two plates.

Apple Pie Filling Directions

  1. Place all of the ingredients in a small bowl, and microwave for 3-4 minutes, or until apples are soft and tender.
  2. Fill each crepe with 1/2 of the filling and enjoy!
